We're already over a week into September, but with temperatures above 90 degrees, after dinner-time (!!), there really isn't a better treat than a homemade popsicle. I'd been meaning to make popsicles all summer (I had quite the delay in getting to my summer-to-do-list as you can tell by now), so nothing like a 100-degree day in early September to finally get to it. We'd been cooped up most the day inside hiding from the high heat, so after an early morning walk to the grocery store for essentials, I finally got to making up these sweet treats for an after dinner delight.

I saw this recipe on Pinterest a few days ago, which inspired me to make my own homemade peaches & cream popsicles. My recipe is adapted from this one, but since I don't have time (or diligence or patience) to do the freezing of each layer (yes, they might be prettier) and wanted to use all the peaches (vs. straining the chunks out), I went rogue. Here's my super easy and quicker version:
(You can use a potato masher or drink muddler, as I used, get as smooth or leave as lumpy as your choose, or have time for).
3. Meanwhile (and not pictured), bring a combined 1/4 cup of sugar with 1 T water in a sauce pan to a boil. Once boil is reached, knock the temp down to low and simmer for about 5 minutes.
